Zucchini Fritters (aka Mock Crab Cakes)
The defining flavour of traditional crab cakes comes from Old Bay seasoning. You can find this spice blend in some grocery stores, or you can make your own.

Ingredients
- 5 cups shredded zucchini
- 2 Tbsp non-dairy butter or coconut oil
- 1 cup breadcrumbs (regular or gluten-free)
- 1/4 cup red onion, minced
- 1 tsp Old Bay seasoning
- 1/4 tsp salt
- 1/8 tsp ground pepper
- 2-3 Tbsp flour
Instructions
- *Using a clean tea towel, spread 1 or 2 cups shredded zucchini on the towel and roll up tightly. Twist the ends of the towel in opposite directions to wring out as much moisture as you can. Repeat with the remaining zucchini.
- *In a large bowl, break up zucchini shreds and work in butter or oil with your fingers. Add in bread crumbs, onion, and spices.
- *Put flour in a small shallow bowl. Coat hands in oil, and form flat round patties (using about 2 or 3 tablespoons of mixture), then transfer to the small bowl to coat in flour.
- *Heat a cast iron pan, and add 1-2 Tbsp oil. When hot, fry patties until golden on both sides. Add more oil as needed.
- *Serve warm with honey-mustard sauce for dipping (we use equal parts brown rice syrup and dijon mustard with a generous amount of fresh ground pepper)
